Basil is an aromatic, warm and sweet herb that deserves your attention. This herb pairs well with a variety of meals, it’s delicious and versatile. From cocktails, oils, main dishes, salads, pizzas and more. Use this list of our 10 favourite basil recipes for your basil bucket list while you are pruning your AVA Byte and for your final harvest.
Pasta: Fresh Pesto Linguini
• 1 bunch of Basil
• 2-3 cloves of Garlic
• ½ cup grated Parmesan
• 2 tablespoons of Pine nuts
• ½ cup of Olive Oil
• Pinch of Salt
Chop the garlic with a couple of basil leaves. Chopping slowly, by hand while adding more basil allows for the basil to be cut in a variety of sizes throughout and contributes to a more dynamic texture. Add about half the pine nuts and continue chopping then add the other half before putting in the grated parmesan. Now add your mixture into a container and cover it with olive oil. Let it sit in the fridge until you are ready to use it.
Pulse basil and pine nuts in your blender/food processor. Add garlic and cheese pulse in the blender a couple of times. Add some olive oil and stir in with some salt. Add to your favourite pasta.
Are you a few social-distancing friends over? Bruschetta is an awesome starter to any dinner party that will have your guests going, 'Ooh' and 'Ahhh' with each bite. A simple recipe that involves basil, tomatoes, garlic and a baguette.
• 2 ripe tomatoes
• ½ cup Onion
• ½ teaspoon
• 1 cup Basil
• 2 cloves of garlic
• 1 baguette
• 4 tablespoons of olive oil
• Thick Balsamic vinegar
• Pinch of salt
• Preheat oven to 450 F and line a tray with parchment.
• Dice your tomatoes and add them to a mixing bowl. Stir in some salt.
• Finely chop up the basil, onion and garlic. Add the mixing bowl and stir.
• Cut up your baguette into small pieces and lightly brush them with olive oil on both sides.
• Put the slices on the tray and add a spoon of tomato basil mix on top
• Place into the oven for 7-10 minutes until golden.
• Transfer to your serving platter and drizzle some thick balsamic vinegar on top.
Pizza: Mozzarella and Basil
Get your oven ready to make some homemade pizza. Place some fresh basil leaves on top of your fresh-out-of-the-oven mozzarella pizza with a touch of split cherry tomatoes to mix together these sweet and warm flavours.
• Make your own dough or purchase some premade pizza dough.
• Preheat oven to 450 for at least 45 minutes
• Flour your surface and add your dough on top. Press, and stretch the dough ball, kneading it. Using a rolling pin work from the centre out to flatten the dough.
• Put your pizza dough on a baking sheet on a tray.
• Add tomato sauce on top and spread it around with the back of your spoon.
• Finely chop into thin slices some fresh mozzarella cheese and cherry tomatoes to add on top
• Using your basil cover your pizza with about 10 pieces.
• Lightly drizzle some olive oil on top
• Grate some parmigiano cheese.
• Put the pizza in the oven for about 15 minutes or until the crusts are crisp and brown.

• 1/4 cup cherry tomatoes

Summertime is here and since bars are closed it’s time to start making those delicious cocktails from home. Switch up the classic mojito and add fresh basil off your AVA Byte with some in-season berries. This drink is can be your go-home happy hour classic!
• 5 Blackberries
• ½ medium squeezed lime Lime
• 1 tbsp of Sugar
• 1.5 ounces of Rum
• 1 cup crushed Ice
• ¼ cup soda water
• 6-7 basil leaves
• Muddle berries, lime and sugar into your cup
• Add basil and muddle again
• Add the rum and stir all the ingredients together
• Add some crushed ice and add club soda
• Top with some crushed ice and basil and blackberries

Side: Lemon Basil Roasted Potatoes
These finger-licking roasted lemon-basil potatoes can be eaten hot out of the oven or mixed into a potato salad with fresh pesto.
• 2 - ½ pound gold potatoes
• 3 tbsp Lemon juice
• 4 tbsp Olive oil
• 3 chopped up garlic
• ¾ tspn Salt
• ½ tspn Pepper
• 1 tspn Lemon Zest
• ⅓ cup chopped fresh Basil
• ½ medium Purple Onion
• Pre heat oven to 450.
• Cut up potatoes and add to bowl
• In a large bowl mix together lemon juice, olive oil, minced garlic, salt, peper, lemon zest
• Finely chop purple onion and basil
• Mix together all ingredients to a baking pan
• Bake for 22-25 minutes until crisp and soft

Seafood: Shrimp Basil Stir-Fry
Elevate your seafood dishes with a handful of fresh basil leaves with this super-quick and easy shrimp dish. Marinade your shrimp with spicy and garlicky flavours. Toss some garlic, lime and capers then toss in a pan with your charred shrimp.
• 1 lb large shrimps, peeled
• 3 chiles, coarsely chopped
• 6 garlic cloves smashed
• 2 tbsp fish sauce
• ¼ cup sugar
• 1 tsp salt
• 4 tbsp olive oil
• 2 cups fresh basil leaves
• 3 tablespoons of drained capers
• Lime squeezed and half wedge for serving
• Blend together chiles, garlic, fish sauce, sugar and salt.
• Add olive oil into blender and blend till smooth
• Marinate shrimp and toss bowl
• Add olive oil to pan on a medium-high heat
• Add shrimp and cook until lightly charred on the edges.
• Add fresh basil until wilted.
• Drain your capers and stir in.
• Squeeze some lemon on top.

Salad: Cucumber and Basil Salad
A delicious, refreshing summer salad. This recipe mixes the cool cucumbers and sweet basil to make a very tasty side dish. Basil pairs really nicely with a wide variety of seasonal greens. You can chop and toss in with your favourite salad greens and make this recipe your own.
• 2 cups of Baby spinach
• ¼ cup Chopped Basil
• 3 Tomatoes
• 1 Cucumber
• ½ small Red Onion
• 2 minced Garlic
• Salt & Pepper to taste
• 3 tbsp Red wine vinegar
Soup: Creamy Tomato Soup
A rich and creamy tomato soup that will warm your soul garnished with some fresh basil that will help maximize this dish’s aromatic flavours.
• 1 yellow onion
• 3 large cloves of garlic
• ¼ cup of olive oil
• 2 ½ pounds of tomatoes
• 1 tsp of salt
• Ground pepper to taste
• 10 large fresh basil leaves
• Dice onion, and garlic.
• Heat oil in medium pot
• Add onion and garlic and cook until soft
• Dice tomatoes and add to the pot.
• Stir frequently until the tomatoes have soften and broken apart
• Add salt, basil and better.
• Add to blender and blend till a smooth puree
• Add olive oil while blending
• Serve and garnish with 1 basil leaf.
Dip: Pesto Hummus
Spice up a classic. Blend together some of that fresh basil into your hummus dish for a unique twist.
• 2 cups of chickpeas, rinsed and boiled
• 1/2 cup fresh basil leaves
• 1/3 cup grated parmesan cheese
• 1/4 cup tahini
• 1/4 - 1/2 cup of oil
• 1 teaspoon of sea salt
• 3-4 garlic cloves
• 1 lemon juice as desired
• Toasted pine nuts
• Combine chickpeas, basil, parmesan, oil, sea salt, and tahini into a food processor and blend on high until smooth
• Add extra sea salt, oil and lemon to taste
• Top with basil garnish and pine nuts
• Keep in your fridge for up to 5 days
Oil: Basil-infused Olive Oil
Infuse your basil in olive oil and add it to any salad, as a marinade, pasta topping, meat rub, a saute or even for dipping bread. Drizzle the olive oil over your meal of choice and/or use instead of butter when cooking. These rich flavors will make any dish pop!
• 2 cups of olive oil
• 1 cup fresh basil
• Add basil and olive oil into a blender and puree until the mix is smooth
• Add oil to a pan and simmer olive oil on medium heat for 1 minute
• Pour the heated mix through a strainer into a bowl
• Let the mix sit for a few hours
• Pour the oil into an airtight glass jar.
• Refrigerate and use for 2 weeks.
