Growing Tips
Once lettuce reaches maturity, harvest every 7-10 days to avoid the lettuce bolting* or producing flowers. You'll know the lettuce is bolting when the stem becomes tall and thick and begins to develop flowers.
Harvesting Tips
Farmers harvest their salad greens in the morning when the leaves have high water content; harvest your AVA salad greens after the pump has run for the crunchiest lettuce. Use the cut-and-come-again harvesting technique for continued harvests around 25-30 days or for a continual harvest, pick the outer leaves around 25 days and allow the inner leaves to keep growing. Watch our "Harvesting Salad Greens" video to make sure you're cutting your lettuce correctly or else it may not grow back properly. We recommend not harvesting more than 3 times, as your lettuce will become more bitter in flavour.

Lettuce is low in calories, fat and sodium. It is a good source of fiber, iron, folate, and vitamin C.

Pensacola lettuce is an excellent source of vitamin A, C, B1, B2, B6, and K. It is also a very good source of dietary fiber, manganese, potassium, biotin, copper, iron, omega-3 fatty acids, phosphorus, chromium, magnesium and calcium.
