The white sap naturally found in lettuce is known as lactucarium and used to be present in much larger volumes in ancient varieties of romaine. This bitter, sap-like substance with sedative compounds was used by the Romans after a meal to encourage sleep.

Once lettuce reaches maturity, harvest weekly to avoid the lettuce from bolting*. If the lettuce begins to bolt, a tall thick stem will develop and want to flower. Harvest!

Farmers harvest their salad greens in the morning when the leaves have high water content; harvest your AVA salad greens after the pump has run for the crunchiest lettuce. You can harvest the whole head of lettuce between 30-40 days or as soon as it is big enough to use. For a continual harvest, pick the outer leaves around 20-25 days and allow the inner leaves to keep growing. Watch our "Harvesting Salad Greens" video to make sure you're cutting your lettuce properly or else it may not grow back properly. We recommend not harvesting more than 3 times, as your lettuce will become more bitter in flavour.
