Arugula

Eruca vesicaria ssp. sativa

Arugula leaves are deeply lobed and flat. They are dark, dull green in color. In contrast, the leaves taste peppery, spicy, and fresh when eaten raw.

Germinates in 5-11 days. First harvest: 40-50 days. Second harvest: around 70 days.

Arugula plants are sensitive to temperature. Warmer temperatures trigger bolting which promotes bitterness so grow it in cooler temperatures.

Harvest arugula when leaves are two to three inches for baby greens or wait slightly longer for a richer flavour of the mature leaves. Careful not to wait too long to harvest as the taste will become increasingly bitter with time.

Arugula’s high nutrient and fiber content has led to its popularity being rich in calcium, potassium, folate, and vitamin C.

The peppery and spicy taste is a natural pest defense chemical found most pungently in the leaves.
