Baby Kale

Brassica oleracea var. acephala

Not to be confused with the less curly “red kale” or “red Russian kale”, this variety has deep purple curly leaves while maintaining a similar flavour profile as green kale varieties.

Germinates in: 5-10 days. First harvest: 40-50 days. Second harvest: around 70 days.

Once the baby kale reaches maturity, harvest weekly to prevent the kale from bolting. If the kale begins to bolt, a tall thick stem will develop and want to flower.

Farmers harvest their salad greens in the morning when the leaves have high water content; harvest your AVA salad greens after the pump has run for the crunchiest lettuce. Use the cut-and-come-again harvesting technique for continued harvests around 25-30 days or for a continual harvest, pick the outer leaves around 25 days and allow the inner leaves to keep growing. We recommend not harvesting more than 3 times, as your greens will become more bitter in flavour.
