Bok Choy

Brassica rapa subsp. chinensis

Bok choy plants carry glossy dark green leaves on thick, crispy, pale green stalks in a loose head. Younger plants tend to be sweeter.

Germinates in: 4-6 days. First harvest: 40-50 days. Second harvest: around 70 days.

Make sure to monitor if the plant starts to quickly grow vertically and produce flowers. This is a process called “bolting” which means the plant is allocating energy towards reproduction rather than producing delicious leafy growth. If you notice signs of bolting, harvest your bok choy immediately for optimal flavour!

Bok Choy is a cabbage that forms no head such that you can harvest several leaves at a time or the entire crop once mature.

High in calcium, magnesium, iron, phosphorous and fiber.

Bok Choy is sometimes called “soup spoon” because of is unique shaped leaves.
