Cornflower

Centaurea cyanus

This annual, edible flower, also named Bachelor Button, is known for its vivid blue colour. It is commonly used to attract pollinators in the garden, dried for teas or potpourri and to garnish salads and decorate desserts.

Germinates in: 3-5 days. First harvest: 40-50 days. Second harvest: around 70 days.

Pinch growing tips when the plant is at least 15 cm (6 inches) tall to encourage bushier growth and more flower development. Deadhead flowers regularly to prolong blooming and produce the highest yield.

Harvest before the flower is completely dry or just before the petals begin to fan open. Harvest just below the flower.

Cornflowers are high in calcium, ascorbic acid, folate, and mineral salts. They are also high in antioxidants and tannins and have anti-inflammatory properties.

The genus name “Centaurea” comes from Greek mythology; however, the common name “Bachelor’s Button” originates from a tradition when men wore the cornflower as a sign of love.
